🌾 What is Nattu Kambu?

Nattu Kambu is the traditional, indigenous variety of Pearl Millet that has been cultivated in Tamil Nadu and across South India for centuries. Unlike hybrid varieties, Nattu Kambu is grown from native seeds passed down through generations of farmers. It is larger in size, darker in colour, and far richer in nutrients compared to commercially grown hybrid millets. Its robust, nutty flavour makes it a favourite in traditional South Indian cooking, especially for making kambu koozh (millet porridge) — a beloved summer staple.

🍽️ How to Cook & Use

Nattu Kambu is incredibly versatile and deeply rooted in South Indian culinary tradition:

  • Kambu Koozh (Millet Porridge): The most traditional preparation — cook kambu with water, ferment overnight, and serve with onion, green chilli, and buttermilk for a cooling, probiotic-rich meal.
  • Kambu Sadham (Millet Rice): Cook 1 cup kambu with 2.5 cups water for fluffy millet rice — serve with sambar, rasam, or any curry.
  • Kambu Roti / Flatbread: Grind into flour and make soft, nutritious rotis or bhakri — a staple in many South Indian and Rajasthani households.
  • Kambu Idli & Dosa: Blend with urad dal to make soft, spongy idlis and crispy dosas packed with nutrition.
  • Kambu Pongal: Cook with moong dal, pepper, and ghee for a wholesome, comforting meal.
  • Kambu Upma: Roast and cook with vegetables and spices for a healthy, filling breakfast.
  • Kambu Ladoo: Roast, grind, and mix with jaggery and ghee to make traditional energy-packed ladoos.
